Camping Snack Idea: Oatmeal Peanut Butter Cookies

You say cookies have nothing to do with camping?  We disagree!  Think camping snacks. These cookies have been coming camping with us for as long as we can remember.  I originally found the recipe from allrecipes.com and with a few small modifications it was an instant hit.  I always make a few dozen before camping and store them in a disposable container.

Oatmeal Peanut Butter Cookies - lightly adapted from allrecipes

Makes 48 cookies

1/2 cup butter flavored shortening

1/2 cup butter (room temperature)

1 cup packed light brown sugar

3/4 cup white sugar

1 cup peanut butter (we prefer crunchy or extra crunchy)

2 eggs

1 1/2 cups flour

2 teaspoons baking soda

1 teaspoon salt

1 cup quick-cooking oats

  1. Preheat oven to 350 degrees

  2. Combine shortening, butter, brown sugar, white sugar, and peanut butter until smooth. Add eggs one at a time until well blended. In separate bowl combine the flour, baking soda, and salt - then combine both bowls together. Fold in the oats. Use a small ice cream scoop to drop dough onto ungreased cookie sheets.

  3. Bake for 10 to 12 minutes until just light brown. Be sure not to overcook.
