Fall Weekend Camping Menu

This past weekend we headed out for a colorful fall camping weekend in the foothills of the Rockies. Unfortunately, Mother Nature decided to dump snow on the ground days before we arrived and plans to do so all week long. So needless to say, it was a little chilly.

We headed out with my parents and were able to split the food prep and buying. Because of the weather, we decided to have a very tiny soup potluck for Saturday, which we were all excited about. Except for my kids, anyone else’s kids refuse to eat or try soup?!? All three of ours swear soup is the worst. I don’t get it.

The only link I have for you is the Chicken Corn Chowder, this recipe is amazing! This will be the third time I’ve made it since Val posted it a month ago. You can find it at https://recipesbyval.com/chicken-corn-chowder/. To save time I went ahead and made the soup at home and then re-heated it in my Instant Pot. It is SO easy - dump the soup in, set it to manual for 1 minute and then allow it to vent naturally (not quick vent). Your soup will be the perfect temperature without having to be babysat, plus it stays warm if anyone wants another bowl.

I LOVE my Instant Pot, especially while camping!
